From Parma to Table with Parmigiano Reggiano

What do you do when you get the itch to travel, but can’t immediately act on it? I’m lucky enough to be taking trips every few months, but with wedding planning and saving our next big trip won’t be until our honeymoon.

When I start to feel that familiar itch, I make an extra effort to explore Chicago. Or, I turn to food. Not in an emotional disaster kind of way, but with exploration as my aim.

I’ve talked before about how food and travel link for me, here and here. I’m excited to share my latest discovery in the way of bringing flavors from around the world into my kitchen.

The name alone elicits wanderlust-heavy sighs. Did you know the word ‘Parmesan’ means, ‘from Parma’? Parma is a city in the northern-Italian region of Emilia-Romagna. It’s about a 3-hour train ride from Rome or Venice, and only a couple hours from Florence.

And it’s famed for, you guessed it, Parmesan cheese.

Parmigiano Reggiano cheese actually comes, unlike other parmesan cheeses, from the farmers and producers in and around Parma.

What does this mean? It means a refreshingly sharp taste of expertly-produced cheese that has the power to transport your buds to sweet Italia with each bite. That’s a mouthful.

Incredibly, a 3-ingredient (milk, salt, rennet) wedge of this cheese packs a punch in any dish. With fall upon us, I’ve been whipping up batches of chili on the weekly. As with tacos, toppings truly make the chili.

For this week’s No Bean Sweet Potato Turkey Chili, I skipped sticking my fingers into a moist bag of pre-shredded cheese. Instead, I took my grater to a fresh wedge of Parmigiano Reggiano and set its flavor loose on my chili. The result? Divine.
